The Cuban Ajiaco

The Cuban erudite Don Fernando Ortiz Libro del Sabor. Book of Savour is considered one of the three discoverers of Cuba. The first one was Christopher Columbus, who assessed the island as the most beautiful place of the world, and he was followed by the German naturalist and geographer Alejandro de Humbildt, whopublished the first scientific essay about our country, after his research work around 1800 and 1804.

But the Cuban character has not a complete study without the considerations of our third discover, diffuser of the African contributions to our national culture. This latter was qualified by him with the culinary term Ajiaco, because it is formed by diverse and assorted influences.

This product evincing the genuine Cuban roots solidified on XIX century as a mixture blending indigenous, Spanish and African elements without ignoring Yucatecas, French and African flashes as well as the permanent Caribbean presence.

There`s a preference in the Cuban food table for a very meaty soup, which makes us sweat while eating called ajiaco. It is made by cooking meats and viandas all together aided by spices to conform a very nutritive and delicious food.

There`s in it the undoubted presence of different customs and diverse hands that go together in this Caribbean island to melt in a successful bundle crowning our table which may end in an exquisite cup pf Cuban coffee and the peerlees company of an habano.
